Hi everyone, i posted a couple days ago about my french macarons not working out so i deicided to stop doing the french method as i have a pop up coming up and i dont have time for bad shells so i started doing the Italian method and wow my macarons have been looking and coming out amazing the only issue im having is lopsided shells, i did 5 batches and most of the shells do come out lopsided, i have a fan forced oven and i cant turn off the fan i cook at 135 celcuris, i have tried folding more as maybe the macarons were to thick but thats not doing anything, could it be the fan in my oven? If so how can i fix it

    I’ve never been able to figure out lopsided shells. I think it comes down to oven hot spots and drying time. The other week I was getting lopsided ones mostly at the ends of my rows. But the majority of them were fine. This week, same recipe, drying time, etc. and not a single lopsided one! It’s so frustrating! LOL

    Turn the pan!!! I just discovered this hack for even macarons. I still get a few lopsided but mostly all perfect. I bake mine at 310/ 315 for 14 mins. I turn the pan at after exactly 5 minutes. This is a game changer!! Also I heat my oven at 325 to make it hot, then bump it down to 310/315 to bake.
