Season with salt and pepper, sear over charcoal 1 minute each side then finish offset (covered) for 5 minutes. Remove and let rest 10 minutes.

    I bbq’d a huge blue fin collar awhile back and served it with picked lemon and herbs on sourdough. Can’t go wrong with collars

    I have a tendency of ordering everything off a menu over a bunch of trips and this was the legit last thing I tried on this menu locally and holy shit, if I had known I’d have been ordering it every time.
