Happy Saturday!

Here’s what I prepared for my husband & I for this upcoming week:

Spaghetti & Meat Sauce

  • 1/2 box angel hair noodles

  • 1 lb ground beef (85/15)

  • 1 jar marinara

Boil noodles, brown beef, drain & season with garlic powder, onion powder, italian seasoning. Add jar of sauce & season the same way. Simmer & taste until it has your desired flavor. Stir some sauce into noodles. Use remaining sauce on top

Chicken Gravy Meal

  • 1.5 lbs chicken breast

  • 1 package bob evans mashed potatoes

  • 1 bag frozen corn

  • 2 packets gravy mix

Season chicken with salt, pepper, garlic powder, italian seasoning. Bake at 400°f for 15 mins or until 165°f internal temp. Follow instructions for mashed potatoes, corn, and gravy. Serve all together or use a divided dish if you prefer

Chicken Veggie Stir Fry

  • 1 cup jasmine rice / 2 cups water

  • 1.5 lbs chicken breast

  • 1 bell pepper

  • Broccoli

  • Carrots

  • Sauce (2 tbsp water, 1 tbsp corn starch to make a slurry, 1/4 cup chicken broth, 1/4 cup honey, 3 tbsp low sodium soy sauce, 1 tbsp sesame oil, 1/2 tsp crushed red pepper flakes) The original recipe also uses ginger but we prefer it without.

Start cooking rice first. Dice chicken breast and season with salt & pepper. Cook in pan, then add veggies and cover to steam until softened. Stir as needed so the bottom of the pan doesn’t burn. Add sauce and simmer until thickened. Serve over rice

Snacks

  • Strawberries

  • Grapes

  • Mangos

  • Energy bites (1 cup rolled oats, 1/2 cup almond butter, 1 tbsp chia seeds, 1 tbsp honey, 1 tbsp maple syrup, 1/2 tsp vanilla extract, 1/4 cup chocolate chips, pinch of salt)

  • Veggie jars (celery, carrots, bell peppers, ranch)

This prep took me about 2 hours to cook (protein and veggies were cut & ready to cook as seen in previous “Ingredient Prep Day” post) and another 1/2 hour to clean up. My husband and I each have 6 meals for the week and plenty of healthy snacks! I loved getting to use my new glass containers if anyone remembers that post! They are the perfect size for our meals & fit great in our fridge.
