* Dried parsley, to taste
* 1/4 cup water
* 1 ripe avocado
* Juice of 1/2 lemon
* 1/4 cup crumbled feta cheese (or blue cheese)
* Thinly sliced red onion
* Chopped green onions
* Lettuce leaves (romaine or mixed greens)
🥄 **For the Dressing:**
* 1/4 cup olive oil
* 2 tbsp balsamic vinegar
* 1/2 tsp minced garlic
* A pinch of salt
* 1/2 tbsp Dijon mustard
