I bought this monk fruit sweetener:
https://buddha-fruit.com/product/lo-han-guo/
which says it’s 200-300x sweeter than sugar and 1/32tsp is equivalent to 1tsp. I have had it sitting in my cupboard for months now because I have no clue what to do with it. I have a MAJOR sweet tooth and want to cut back on sugar and I think this would be a good substitute. Does anyone else use this stuff and have any desserts they could share?

Make ice cream with it. I have a ninja creami. Works great
Oh you found pure monkfruit sugar!!! Wow. Thx for posting the link. We only have it with additives around here.
I only use Cain sugar for the hummingbirds any more… use monkfruit sugar for EVERYTHING else.
This is good for protein shakes, ice cream, chocolates, fudge, cheesecake, whipped cream, or pudding.
If you have unsweetened baked goods or can find a recipe that uses 100% stevia or monk fruit, you can add a little for a sweet taste. It will not replace a granulated sweetener in baked goods.
The simplest keto desert is whipped cream. This also lends itself to tweaking. You can start low and add more to taste. If you don’t want to make anything, just sweeten up some plain yogurt. (Watch the carbs on yogurt, Greek or skyr is better.)
Note, some recipes rely on the properties of sugar for various effects. Many don’t. Look for recipes that use non sugar sweeteners and try yours.
Also, some sweeteners need a little coaxing to dissolve. If they don’t dissolve, results can be unpleasant. So what you have mayn’t work straight. If you have issues, get a recipe that applies a little heat or has a dissolve in solution step. Try something like panna cotta?
I’m never actually seen 100% monk fruit. It’s usually cut with erythritol, if you’re lucky.
