Ingredients :

• 2 tbsp cumin seeds
• 2 tbsp coriander seeds
• 1 tbsp black peppercorns
• 1 tbsp green cardamom pods (about 8)
• 1 tsp cloves
• 3 black cardamoms
• 2-inch cinnamon stick (or 2 small sticks)
• 1 small bay leaf

Instructions:
– Dry Roast Spices:
Add all the spices to a dry pan. Toast over medium heat for 2–3 minutes until aromatic, stirring constantly. Don’t burn!
– Remove from heat and let them cool completely.
