L’Experience Paris, a French café with multiple Eastside locations, has announced that Chef Johannes Bonin is joining the team as Executive Chef. His appointment marks a notable change for the business, which includes a café and pâtisserie in Downtown Bellevue’s Soma Towers, located at 258 106th Avenue NE.
Bonin brings over 30 years of international experience, having worked in kitchens across Paris, London, St. Moritz, and Dubai, where he served as Executive Pastry Chef at the 7-star Jumeirah Burj Al Arab. He has received global recognition, including endorsements from highly acclaimed chefs such as Pierre Hermé, Alain Ducasse, Hélène Darroze, and Pierre Gagnaire.
His first seasonal patisserie menu is set to debut July 11, and will feature classic French pastries alongside desserts inspired by his international experience. The new menu includes items like Sahar, a pistachio-apricot dessert with orange blossom cream; Victoria, a coconut and pineapple creation with Mediterranean influence; and Emilie, a choux pastry filled with vanilla diplomat cream. Updated brunch, lunch, and dinner offerings are expected to follow later this year.
Bonin’s most recent role was at Suvretta House in St. Moritz, Switzerland, a hotel known for its fine dining and high Gault & Millau rating. Earlier in his career, he represented the UK at the 2011 Pastry World Cup, and has been recognized with honors in both Europe and the Middle East.
The addition of Chef Bonin is part of L’Experience Paris’ plans to expand and elevate its offerings across the region, with Bellevue playing a central role.
