Welcome back to episode 11 of Ramadan recipes you can rely on. Growing up, I was confused why my mom would spend so long making labor inensive meals like the stuffed squash called kusa. I saw her meticulously core one squash after another, stuff each one with a ground beef and rice mixture, and hover over the stove for hours checking on the consistency of the squash. I told myself I would only cook quick and easy meals for my family. And while that’s mostly the case, I still find myself just like my mom, especially during Ramadan, so willingly making these labor of love meals.
