This recipe is easy to make, crispy, has all the cozy, comforting flavors of the original while being healthier. Start by gathering the ingredients to make this recipe. For the breadcrumb mixture, you’ll need 1/2 cup of po breadrumbs or Italian breadrumbs, 1/4 cup of grated Parmesan cheese, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon dried basil, and 1/2 teaspoon of dried oregano. Thoroughly mix all of these ingredients. Next, slice two boneless, skinless chicken breasts in half lengthwise to create cutlets, or you can pound them into an even thickness. Add them to a bowl and coat with 1 to 2 tsps of olive oil or use olive oil spray. Then add them to the breadcrumb mixture, thoroughly coating both sides of each chicken cutlet. Place all of the coated chicken cutlets in a single layer in the air fryer basket. Cook them at 375 degrees Fahrenheit for 6 to 7 minutes. Then flip and cook for another 4 to 6 minutes on the other side or until fully cooked and the internal temperature reaches 165° F. After that, spoon marinara sauce over each piece and sprinkle with mozzarella cheese. Then air fry for another 1 to 2 minutes until the cheese melts and the sauce is warmed through. You’ll need 1/2 cup of marinara sauce and 1/2 cup of shredded light mozzarella cheese. Garnish with fresh basil. Serve warm and enjoy.
