i can’t edit but to be clear, this is a red velevet cake that they cut like it’s shawarma or al pastor – that is what i’m after

Looks pretty cool! I’m guessing they use a crepe like a wrap for the cake? You could probably do some sweet toppings too, maybe more icing, whipped cream, fruits, nuts, sprinkles, etc. Hope it goes well!
Could always go for a baumkuchen. I’ve never seen one that large but would be interesting.

Get a gyro spit thing and stack 12 ish layers with buttercream in between. Carve away at the layers while turning them and deposit them in crepes.
It should be a mango and pineapple cake with tajin frosting
Oh hell yeah. It looks like they’re cutting it into crepes. Tag on some kind of a sauce bar and I’d need to be trespassed from the area.
So funny, and genuinely not as challenging as you might think! It would take baking a lot of layers, placing them one by one on a metal mount, making sure to frost in between each layer before adding the next. Carve down to the general shape and then use a LOT of plastic wrap to keep it airtight and moisture locked in. I think your biggest challenge will be finding the space to refridgerate such a big cake.
Does it look like a mini crepe they’re using for the tortilla? 🤔
Have you ever had a cake pop? it’s cake and frosting mixed together. I think doing this could add density and strength to keep it from falling apart.

Yep, do it exactly like it looks. Just stack layers in layers with frosting in between. I’m not sure how high you could go, so you definitely want to use a cake base with some substance to it.
I love this. Your cake will have to be quite sturdy, and possibly cold for this to work.

They’ve got a pistachio yogurt sauce and a berry reduction for the two sauces, and then supposedly there was something to mimic onions too, but that wasn’t in the original.

Something like this would probably work best, IMO.
Maybe use cake pops of various flavors as “falafel” as a backup for people who don’t like the flavor of the cake shawarma?
Maybe a mildly sweet peanut butter sauce in the place of hummus?
You could even theoretically do a tapioca pearl version of tabbouleh..
