I’ve been wanting to try some braised short ribs. I’ve never bought short ribs before and got these in my recent grocery order… seems like it’s mostly fat? There’s one or two ribs in there (photo #2) with a decent amount of meat, the rest are 80% fat.
For almost $9/lb I imagined more meat. Is this how this cut is supposed to be? Or did I get duped?

I know they’re supposed to be higher fat content but every recipe I’ve seen, the pieces look meatier…

    I see this a lot when short ribs go on sale. Not how it’s supposed to be. I’ve seen some meaty buddies that are a couple inches thick when not on sale. If this is the norm at your store, maybe go to a butcher or meat place. They offer better cuts but you’ll almost definitely pay more. Short ribs are my absolute favorite and well- worth the cost and effort when done properly.

    Those are short ribs, but they are absolutely not trimmed properly. Basically, the poster above is saying the cutter ran them through the saw and scraped them, but didn’t trim. Unless you’d like to have some tallow for yourself, I would take them back and request a refund.

    I personally love em with all that fat cap on there some stores trim it all off but once they come out the oven. Oh my god they are great. I usually cook em in a glass pan with about half a tub of butter and pepper.

    You got ripped off but it would make for some really delicious beef stock!!

  6. What you are probably looking for is plate ribs, not shot ribs. You may have to go to a butcher for that.

    When my local grocery store (Publix) has them available, I pick the packages with the most meat. There are always some that are scrawny like yours but I just skip over those. You just need to be selective or skip if they do not have meaty ones.

    Those are short ribs. Be glad they’re $9 a pound here in NY $12-15 a pound ! Look for other packs that are like pic 2 agree the others are a bit on the fatty side.

    For a grocery store yea, you might get some better ones from a quality butcher.

    These look like normal American grocery store butcher short ribs. If you get them at an Asian market or carniceria they will cut them flat with the little bone nubs, they taste the same and have the same delicious connective tissue that makes them render into such tender rich meat. Your cut is great for braised short ribs, the cross cut is better for grilling applications.

    I just bought some baby back ribs the other day put them in the pressure cooker with rub then put it in the oven with barbecue sauce for 10 or 15 minutes. Came out great can’t go wrong with Baby bad though.
