We add some olive oil to the pan. We chop 1 small onion. We add the chopped onions to the pan and start sautéing. We chop half a red bell pepper. We chop 1 small green pepper. We add the peppers to the onions and continue sautéing. We blend 1 or 2 tomatoes, depending on their size. We’re making a fresh tomato sauce. We add the prepared tomato sauce to the pan. Let’s add the spices now: Sweet paprika… …black pepper… …chili flakes… …turmeric… …and ginger. What did we forget? Of course… …salt and… …garlic! Cover the pan and cook for about 5 minutes. Now it’s time for the eggs. We crack 2 eggs. We sprinkle some black pepper and chili flakes over the eggs. Cover and cook for a few more minutes.
