    That looks awesome! Does it also work to use Besan instead of cornstarch? Or is the cornstarch needed to get it crunchy enough?

    I love eggplant schnitzel, but I’ve never done it like this.

    I cut the eggplant into schnitzel, crumb them and fry them in the pan.
    I also leave the skin on it, which I actually like.

    But I’ll try your method, too.
