🛒 Ingredients (Serves 2)
• 2–3 medium tomatoes (chopped into chunks)
• ½ cucumber (sliced or chopped)
• ¼ red onion (thinly sliced)
• A handful of Kalamata olives (pitted)
• 1 thick slice of feta cheese (or crumble it if you prefer)
• Olive oil
• Dried oregano
• Salt and pepper
• Optional: a splash of red wine vinegar

🥗 Simple Method
1. Chop tomatoes and cucumber into chunky pieces.
2. Add to a bowl with sliced onion and olives.
3. Place the slab of feta on top (or crumble over).
4. Drizzle with olive oil, sprinkle with oregano, salt, and pepper.
5. Add vinegar if you like a little zing. Done!

Welcome to G in my A to Z series where I make 26 dishes from around the world. Today we have G for Greece and I decided to make a nice colorful and refreshing summer Greek salad. I start off by prepping all my vegetables which is some fresh tomatoes, cucumber and thinly sliced red onions. I then go on to deit my olives. I would advise to get deep pitted olives as it makes the process so much more easier. I get my fresh feta and cut it into bite-sized pieces, ensuring to be really careful as it tends to break up really easily. I add this to the bowl really gently again so it doesn’t look messy. And then I season my salad with some dried herbs, salt, pepper, olive oil, and balsamic vinegar. And it was ready. It was so yummy and perfect and light and refreshing. And I hope you guys try.

  1. My go-to salad, minus the olives. I'd leave out the salt, though. The feta and olives already have enough of that. ❤
