Cyprus Gemista – My Mum’s Traditional Stuffed Vegetables 🇨🇾
(A peaceful, no-talking recipe — just the way my mother made it)
This is my mum’s version of Gemista — a beloved Cypriot dish made by stuffing vegetables with a flavorful mix of beef, herbs, and rice.
No talking, no face — just the peaceful rhythm of traditional home cooking. A dish full of love, flavor, and family memories.
🍽️ Serves: 6–7
👩🍳 Cooking for 2–3? Just half the ingredients below.
🥘 Filling Ingredients (for a full tray):
750g beef mince (or pork mince) 🐄 (see vegan swap below)
2 large onions, finely chopped 🧅
3–4 garlic cloves, pounded 🧄
½ bunch fresh parsley, chopped 🌿
A generous handful of fresh mint leaves, chopped (more than 10–13 leaves) 🌿
1 ½ small cups of rice 🍚 (naturally gluten-free)
2 tbsp olive oil 🫒
½ cup tomato purée 🍅 (check label for additives)
Juice of 1 lemon 🍋
1 ½ tsp black pepper
Salt to taste (about 2 tsp, adjust as needed) 🧂
Blended pulp from the scooped vegetables (zero waste cooking!) ♻️
🫑 Vegetables to Stuff:
3 aubergines 🍆
2 large zucchinis (or 3 medium) 🥒
3 sweet peppers 🌶️
4–5 ripe tomatoes 🍅
🔥 Baking Instructions:
1. Preheat the oven to 180°C (356°F)
2. Arrange stuffed vegetables in a baking tray and cover with foil
3. Bake for an hour
4. Uncover and return to oven for another 40 minutes, until golden on top

🌾 Gluten-Free? ✅ Naturally gluten-free! Just double-check rice and tomato purée for additives.
🌱 Vegetarian/Vegan? Swap the meat for cooked lentils, grated mushrooms, or vegan mince.
🧄 Garlic/Onion Sensitivity? Use garlic-infused olive oil and green onion tops, or omit completely.
🍚 Low-Carb Option? Substitute rice with cauliflower rice (lightly pre-cooked).
🫒 Oil-Free? Skip olive oil or use a splash of veggie broth instead.
