Had the opportunity to dine at Joel Robuchon at the MGM Grand recently.
The meal in general was reminiscent of many 2-3 star meals I’ve had in France, which pretty well tracks.
It is my understanding that this was a Michelin 3 star prior to Vegas not being included in the list any longer.
The food was exceptionally delicate and well presented. Service was the tops.
Started with bread service which is quite likely the most elaborate I’ve seen. 16 varieties of breads to choose from.
The first course was the crustacean gelée, ak king crab and gold leaf. The presentation was incredible and as a chef I could see a dish like this burying your station.
From there a tomato dish with tomato water gelée, and grape tomatoes filled with gazpacho. Delicate, beautiful and lightly acidic.
After that was corn and four gras, which was mild and tasted seasonally appropriate.
Many courses followed but I will keep this brief.
The duck with the glazed cherries stuffed with marcona almonds was absolutely delicious.
Wagyu strip with “add yourself” spices and salt was cool but the roasted garlic garnish was smidge clunky.
I really enjoyed my meal but it was on the expensive side.
No alcohol+tip was a bit over $700 for a single diner. No ragrets.

    Your experience very much tracks my own. “No ragrets” indeed.

    But will I do it again, nah probably not. Because next time I will do either Guy Savoy or L’Atelier.

    We were just there on Saturday for the second time. One regular tasting menu, one vegetarian. We tried to pace ourselves at the start with the bread cart and still ended up barely squeaking by with the dessert cart– so many desserts I just didn’t have room to try.

    We also had one mid-level wine pairing (by FAR my favorite wine pairing among Robuchon, E, Addison, Single Thread, Kali, Knifepleat, and O’) and my partner had a cocktail.

    My least favorite dish was the tomato one, mainly because I don’t like tomatoes. I thought the corn dish was a standout… loved how it moved from sweet to cornbread on the finish. The cod and duck were both fantastic too.

    Price seemed on par with other 3-stars I’ve been to. I like Addison’s huge window views, but the service and atmosphere in Robuchon is pretty spectacular, if you don’t mind a more formal approach. Plus, it’s always fun to dress up a bit.
