Today we’re making a true Sicilian classic: Caponata.
It’s a sweet and savory celebration — cooked low and slow, the way it’s made in old Italian kitchens.

🎬 What’s in this Recipe:
We start by caramelizing eggplant until golden, then build flavor with garlic, onions, bell peppers, celery, tomatoes, olives, and golden raisins — finished with white wine vinegar, honey, and fresh basil.
We also bake up crispy Parmesan toasts for the perfect pairing.
The result? Bold, balanced, and irresistibly Mediterranean.
🛒 INGREDIENTS:
• 2 small eggplants (cubed)
• Olive oil
• 3 garlic cloves (sliced)
• 1 large onion (chopped)
• 1 yellow bell pepper (chopped)
• 1 red bell pepper (chopped)
• 1 celery stalk (finely chopped)
• 2 ripe tomatoes (peeled and chopped)
• Salt, black pepper & chili flakes to taste
• 50g golden raisins
• 50g walnuts (roughly chopped)
• 100g green olives (sliced)
• 1 tbsp white wine vinegar
• 1 tbsp honey
• Fresh basil (to finish)
🫓 Toasts:
• 1 baguette or soft Italian bread
• Olive oil
• Grated Parmesan
🔥 PREPARATION STEPS:
1️⃣ Sauté cubed eggplant in olive oil until golden. Set aside.
2️⃣ Sauté garlic in olive oil, then add chopped onion. Cook until translucent.
3️⃣ Add chopped bell peppers and cook until soft.
4️⃣ Stir in chopped celery, salt, pepper, and chili flakes. Cover and cook.
5️⃣ Add chopped tomatoes, raisins, walnuts, and olives.
6️⃣ Stir in vinegar and honey for balance.
7️⃣ Return the eggplant and simmer for 25 minutes on low.
8️⃣ Finish with fresh basil.
9️⃣ Toast sliced bread with olive oil and Parmesan at 180°C (350°F) for 10 min.
🔟 Serve the Caponata warm or cold with crispy Parmesan toasts.
