Tramezzini are classic Italian sandwiches, with three main ingredients: tramezzino crustless white bread, cream cheese and mayo. All other ingredients can be adjusted as you like.
But my suggestion is choose one protein (if you go with two proteins I suggest one to be hard boiled eggs) and some fresh vegetables. This makes all the difference. The protein should soft. For example better use boiled chicken then pan fried.
I will make today my two favourite variations: with tuna and ham in two forms – square and rolled version.
For the TUNA version I will use the following ingredients:
3 slices of tramezzino white crustless bread
1 can of dried tuna
2 hard boiled eggs
cream cheese
mayo
one chopped spring onion
one red paprika
one cucumber
For the HAM version I will use the next ingredients
one slice of tramezzino white crustless bread
cream cheese
mayo
avocado
cherry tomatoes
ham
Because cream cheese is bit firmer, I always put cheese on the outer layers, and mayo on the inside layer.
Tuna tramezzino version are two portions, and the assembly is pretty easy.
I first go cream cheese and eggs on top. On the other slice I put first mayo then sliced spring onions. Because spring onions are sticking to the mayo, it is easy to flip.
Once flipped, mayo goes first, then tuna, on top sliced cucumbers. On the third slice goes cream cheese with sliced red paprika.
This is two portions.
Ham tramezzino will be rolled, just to show of different format. In the end it will be one portion.
First goes white tramezzino bread, on top cream cheese followed by avocado slices topped with ham. Because mayo needs to go somewhere, it goes on the ham with cherry tomatoes slices.
And then just roll it, on one hand gently so it is not squeezed, but on the other hand firm so that all ingredients come together nicely.
I like to fix it with a tooth-stick, because it takes same time to get it into form.
And now, just enjoy your sandwiches.

Welcome to Alen.Cooking. Today I will show
you how to make tramezzini – Italian white bread sandwich. It is a classic Italian street
food. And luckily for you and me, it is really simple and easy to make. In my opinion, there are
three main ingredients that you need. Tramezzino white bread without crust, mayo, and cream
cheese. All other ingredients are optional, and you can use whatever you like. I will
focus today on a version with tuna and ham. So, let’s start and make our tramezzini. Today’s
ingredients are white tramezzino bread, canned tuna, sliced ham, two hard
boiled eggs, one avocado, some mayo, nice red paprika, couple of cherry tomatoes
one cucumber cream cheese and one spring onion. The first step is to apply cream
cheese onto the tramezzino bread. I find it the most convenient to put cream
cheese on the outer slices of the tramezzino sandwich as the cream cheese is bit firmer
than mayo. So it’s easier to smear it on the outer side of the slice. Once the
cream cheese is smeared, it is time to layer the hardboiled eggs. I prefer to have
the egg yolks evenly distributed on every part of the bread and then just to fill up
the gaps with the whites. Mayo goes on the middle slice of the tramezzino sandwich which
I will top with finely chopped spring onions. Now it is flipping time. Don’t worry about
the onions. They will stick to the mayo and therefore to the bread. As you can see, it is
pretty easy. Mayo comes on the other side of the bread slice as well. Don’t use too
much because it is on both sides. Now, the protein for first tramezzino
sandwich is canned tuna. If you can, try to use good high quality tuna which you
have tried before. This tramezzino sandwich now needs some vegetables. In this combination
cucumbers are perfect. This tramezzini sandwich now needs some vegetables. In this combination
cucumbers are perfect. The green color and the crunch for texture. The other plus is, it
makes this sandwich much fresh and light. To finish the tuna version of the tramezzino
sandwich, cream cheese needs to be applied on the upper side and layered with red paprika for
taste, but also to get some nice vibrant color. Now again, it is flipping time. Don’t
worry, paprika will stick to the cream cheese. It is easy to flip. And
as you can see, nothing fell out. This is actually two portions. And how it
looks, you can see later in the tasting part of the video. The second version of a tramezzini
sandwich has ham as the main protein. Again, cream cheese goes first. For color and texture,
I will use avocado slices. In the end, it is a Italian sandwich and it should look beautiful. On
top of the avocado, the main protein, ham. This is a rolled variation of the tramezzino sandwich.
It is made a bit differently. Mayo goes directly onto the ham. With mayo in place, it’s time for
vegetables. In this case, it is going to be sliced cherry tomatoes. Something with vibrant color and
fresh taste. Now it is time to roll the tramezzino sandwich. While rolling the sandwich, I like to
use bit more force. This way all the ingredients come really good together and keep everything
in place. Once it’s rolled, I use my secret technique. Toothpicks. They will hold the sandwich
in shape before serving. And speaking of serving, it is time to plate our sandwiches. The square
tramezzino sandwich will get a classic diagonal cut. I opted to cut the rolled one under
an angle. It looks nice this way once it is served. Now it is tasting time. Our tramezzini
are done and it’s time to taste this one. Two nice. I would say the most classic one you will
be finding around. And we’ll start with this one. How good that mayo that cream cheese
together with tuna and paprika. You can make your variations. You don’t need to put
all the ingredients I put inside. Put inside. But always it should be cream cheese and
mayo. Everything else can change as can you see in our second one which is really nice
actually. I like this rolled format and you will really see them in Italy especially in
the touristic places because it looks nicer. And again, that mayo and cream cheese works
perfectly. It takes about 5 minutes to make them. Whichever version you choose,
you’re going to have a nice day.
