Beef n’ Broccoli Stir Fry Bowl
For the Beef Marinade:
– 400g beef rump or topside, thinly sliced against the grain
– 1 tbsp soy sauce
– 1 tsp sesame oil
– ½ tsp white pepper
– 1 tsp corn flour
– 1 tsp baking soda
– 2 tbsp cold water
For the Stir Fry:
– 1 tbsp neutral oil (vegetable or canola)
– 1 small brown onion, thinly sliced
– 1½ cups broccoli florets, quartered
– 2 garlic cloves, grated
– 1½ tbsp oyster sauce
– 1 tsp light soy sauce
– 1 tsp sesame oil
– 1 tbsp chilli crisp or chilli oil (optional, adjust to taste)
To Serve:
– 1 egg (optional)
– Steamed rice
1. In a bowl, combine sliced beef with soy sauce, sesame oil, white pepper, corn flour, baking soda, and cold water. Massage the mixture into the meat for 1–2 minutes. Let it sit for 5 minutes.
2. Heat 1 tbsp of neutral oil in a frying pan or wok over high heat. Fry the beef in two batches until well-browned on both sides. Remove and set aside.
3. In the same pan, add the onion and stir for 1 minute to soften. Add the broccoli and cook for another minute until vibrant green. Add the grated garlic and cook for 30 seconds.
4. Return the beef to the pan. Add oyster sauce, soy sauce, sesame oil, and chilli crisp (if using). Stir well to coat everything evenly. Remove from heat.
5. Fry an egg to your liking, ensuring the top is slightly cooked so the yolk stays intact. Place the egg yolk-side down in a bowl.
6. Spoon the beef and broccoli stir fry over the egg. Top with steamed rice. Press the rice down gently to compact the layers. Invert onto a plate and lift the bowl to reveal the layered presentation

Start by slicing your beef super thin against the grain and then chuck it into a bowl to velvet. And velveting is a Chinese cooking technique used to prevent your meat from drying out or becoming chewy when cooking at high heat. Now, prep all your veg in advance because the cooking process only takes about 5 minutes. Over on the stove, we’re going to heat up some neutral oil and fry our beef until deeply browned and cooked through. Remove the beef from the pan, chuck in your vegetables, and cook until soft. And if anything starts to burn or stick, you can add a splash of water to loosen things up. Chuck your beef back in. Give it a flip to combine. Then season with oyster sauce, sesame oil, light soy, and a bit of chili crisp. And that’s it. So, you could serve this as is, but wouldn’t it be a bit more fun if you fried an egg and made an upside down bowl? That’s entirely up to you.
