This is my recipe for a gluten free chicken casserole. I use about a pound of thin chicken breasts. 6 servings of white rice, 2 cans of gluten free chicken soup and breadcrumbs on top- gluten free. Cheese is optional. Eating gluten free, it’s hard to find recipes that I use to make. My whole family loves this recipe. It’s also a great way to invite your adult children over for dinner!
Okay. So, I precook the chicken and I get the thin chicken breast. Um, and I put uh garlic on top and paprika. I cook in the oven for about 325 for about 20 minutes. Halfway through, 10 minutes through, I flip sides and put uh the seasoning on both sides. And I precook the rice. You don’t have to. I mean, I’ve seen people where they just put it in the casserole and they’re done. This is the gluten-free version. So, Campbell has come out with gluten-free cream of chicken. Love you, Campbell. So, I use probably one and a half cans. After the chicken um has cooled, I shred it and then I put it in on top of the rice in the casserole dish. And I put the rice in the casserole dish. Okay? Okay. And then I take the shredded chicken. I put it on top of the rice. Now, at this point, you could add uh if you wanted corn or green beans, but I’m leaving mine kind of plain, Jane. All right. Then I take my cream of chicken. You could do cream of mushroom, but my daughter has allergies to mushrooms. But anyways, uh and I’m going to share this with her. I do the can and then I do about a half a cup of water in the can. And then I’ll show you what I do. I pour it on top of the chicken and rice. So, I pour it on top and kind of uh go across the whole thing. So, I used and it’s up to you, but I usually do like double the can. So, I use two cans of cream of chicken, gluten-free, uh with a half a can of water in each. So, I like the rice like that. All right. Now, this part is optional, too, but I take uh cheese slices and then put it across. And then I’ll add some gluten-free breadcrumbs. But this cheese is garlic uh cheese. So yummy. So, your cheese, you know, whatever flavor you like. If you like American cheese, put that on top if you want. If you want cheese on it. Let me get my breadrumbs now. And here’s the breadrumbs I’m going to use. Uh they are glutenree and dairy free. I honestly just uh took a handful and just sprinkled on top. Just makes it a little um crunchy on top. Then it’s good. All right. Now, I’m going to put it in the oven for 325 for about 40 minutes. Okay. Here is the casserole final product. Yummy.
