Located in the heart of Palermo Viejo, Puraltura is a new restaurant that focuses on pairing curated wines with simple, classic cuisine. The wine list features more than 80 labels of diverse Argentine styles and varieties.

The project was born from the reunion of three childhood friends who, after following different paths, decided to join forces. What began as a series of tastings in October 2024 eventually turned into a restaurant that opened in March 2025. Each partner contributes a unique perspective: Alejandro Mesa Rubio, sommelier and curator of the wine selection; Luis Salazar, restaurant entrepreneur; and Gonzalo Pérez, accounting and financial advisor.

The intimate dining room seats 22 and offers warm terracotta-colored walls, light wood furniture, soft lighting, and a large wine display cabinet that dominates the space.

The entire experience revolves around wine. After guests choose their food, sommelier Mesa Rubio helps them to select the glass that best accompanies the dish.

The menu features starters such as grilled prawns with butter, peperoncino and pangrattato; beef tartare with old-fashioned mustard and basil emulsion; and a gourmet cheese board. There are also vegetarian options, such as beetroot tartare or burrata salad with cherry tomatoes, strawberries, and almonds.

Among the main courses, highlights include the catch of the day with kale and beetroot, chorizo steak with baby potatoes and chimichurri, homemade gnocchi with pesto, and tagliatelle with prawns, butter, and lemon zest. For dessert, crème brûlée with seasonal fruits, chocolate cream, or pear in wine.

The wine list, curated by Mesa Rubio, offers labels from across the country: from classics aged in wood to fresh, biodynamic, or high-altitude styles. Puraltura also offers a rotating selection of wines by the glass designed to pair with each section of the menu.
