Got these plants listed as Poblanos from Home Depot but they don’t seem to be maturing any further like poblanos so I’m wondering if I didn’t get poblanos and they were mislabeled

Looks like Jalapeño. And there are breed(s) of Jalapeño that are very large (Mucho Nacho etc) . Might be what you have.

Jalapeño , you can pick at any stage, fully ripe is red, they are sweeter when red, but still pack a punch, experiment with them and see what stage you like, they mix plant tags all the time, it’s nothing new,

Poblano’s are dark green, definitely jalapeno as others have said.
