    That’s wild. I’d slice it thin and treat it like bacon/belly. Crisp it up on the edges for some tacos suadero.

    Edit: On reflection, I’d remove the cap/spinalis first and treat that like the lovely delicate steak that it is. Then do suadero with the rest.

    Reminds me of a prime rib I ordered from a local place a few years back. It was quite literally a slab of fat. I tried manning through it, but neither my girl at the time nor I could even cut it. She complained, but they refused a refund since we had eaten our chef salads that came with the meal. We didn’t make a huge deal, we just apologized and said we weren’t able to eat even a small portion of our meat. The chef even came out and said that’s what they’re supposed to be like. They gave us a $20 voucher toward our next meal and we left. I gave the voucher away.
