going carnivore day 72 the porquetta this cinnamon roll of meaty goodness is everything you want and more but it is a two-day cook this is me 24 hours in the past and this is a skin-on pork belly the porquetta prep presents a ponderous problem do we follow tradition no absolutely not butterflying open the pork belly we get the stuff in a base layer of seasoning normally I go with something sweet but I’m avoiding that sweet white powder for now we got the fresh herbs rosemary sage and thyme an entire head of minced garlic best not to undershoot this one along with a good bit of shallot definitely way too much Parmesan cheese but I was committed at that point no turning back layer of pursuto always a fan of the pursuit roll everything up tight with the skin on the outside this is important and we trust start by tying the ends and working toward the middle cover that pork skin with salt and rest in the fridge overnight let’s get this porquetta skewered up and ready to go on the forge while this porquetta spins around let’s go over this beautiful this gorgeous grill this is the Forge the newest the latest grill from TMG Pits y’all have seen this in a previous video where I went and did a little cook for the guys the shop crew made them some pecana and sausage today we’re utilizing the other amazing feature of this live fire grill the rotisserie this grill also has shelves that will fit into it just like that and if I wasn’t such a degenerate I’d probably have some vegetables or something going up here but you know me just eating the meats man this thing is smelling good elephant in the room yes the rotisserie did slip out a little bit i wasn’t really paying attention i didn’t have it seated all the way in there and it did get a little burnt there on the edge there but hey that one’s on me how about a little progress report doing great feeling good had a fasting day yesterday so feeling great from that weight is still the same still at 225 i’ve definitely hit a little bit of a stall that’s why dieting in like January February is so easy there’s no major holidays nothing’s really going on you’re past like the big end of year holidays whereas you start get to March you know you got spring break you start getting the holidays again going out and doing stuff the weather’s getting nice so this is where you know rubber meets the road it’s a little bit more difficult keep an eye on this probably got about 10 more degrees and I am loving this rotisserie it’s basting itself the way the juices are just dripping off this thing and frying that that rind up oh my goodness this is going to be good y’all that is ridiculous y’all now this is not controversial at all but I don’t think there’s a food out there that a rotisserie can’t make better and with that I’ll see y’all

  1. Does it count as carnivore with all that garlic and shallots? Seems more like meat-centric paleo based on my understanding. Genuinely curious, it also took me a bit to understand dairy and eggs being included, so I'm just trying to learn.
