I was trimming up different loins for a customer when I saw this. How does that happen?

    Oh that’s just marbling says most butchers at big chain stores. Not all though there still are some old school butchers out there, that use to break down whole animals before everything came ready to cut.

    I always thought it was arthritis I asked a doctor about it she said it very well could have been calcification of the flesh or arthritis. I see this often around bone or joint tho and flesh gets hard sometimes almost rock hard and stiff I work in cattle fabrication high volume 1000+ head a day

    …bruised. Inedible. 50 years of cutting meat. Seen it many times in loin meat….especially top sirloin. The animals bang into each other
