Ive only heard of this but ill reply with a grain of salt. I think the enzymes in super legit honey will work to break down connective tissues. Ive heard it can turn even tough cuts into mouth melters. I suppose you can mostly wash the honey off and probably not get too much sweetness. Could help with some nice crust, too.

Honey contains trace amounts of proteases and is acidic. To a small degree it can “tenderize” or soften meat. I’ve done it with chicken before, but it was soft as could be from the sous vide anyways. I’ve never tried no honey vs honey side by side to see if it actually makes a difference.
