This was my first time doing ribs on the Traeger and first time making my own ribs at all! My son loved them, my wife who doesn’t usually like pork loved em. I loved em! So it was a win all around. My wife made the bread yesterday with “help” from my son.

Everything tasted delicious! Used Traeger hickory pellets and you could really taste the hickory smoke flavor. They had a nice bark but not too crispy. They were tender and chewy but came off the bone easily. Couldn’t be happier with my first go at ribs! I think this rack was like $14 or so at Trader Joe’s so it wasn’t even expensive.

5 ingredient rib rub:
* 1/4 cup packed light or dark brown sugar
* 2 tablespoons smoked or regular paprika
* 2 tablespoons kosher salt
* 1 tablespoon garlic powder
* 1 1/2 teaspoons freshly ground black pepper

Overnight dry rub in the fridge

Here are my cooking notes:
Noon on the smoker
2hrs on smoke setting
Internal temp says 150
10 sprays of acv/water
Set to 225
Check and spritz after 45 mins
Internal temp says 172
Check and spritz after 45 mins.
Internal temp says 180
Check and spritz after 45 mins.
Internal temp says 185
Check and spritz after 45 mins.
Internal temp says 189
Took temp with pen and it was 181
Checked after another hour or so and took them off.
Internal temp says 194
Took temp with pen and it was 189 but a few places were lower.

    Nice ribs! I’d suggest doing 225 to 250, spritz once your rub sets, wrap when you have a 1/4” of bone showing for at least an hour. Do the tong test for completion test. Don’t even worry about internal temp usually 3 hours until wrap 1 hour wrapped possibly more.

    Yes sorry I’d skip the smoke and just straight cook. You will still get your smoke absorption. But I’m not saying what you did is incorrect by any means, your ribs looking great! Just saying what I do.
