It took me a few tries with the dough. I tried King Arthur recipe for sourdough and it was unmanageable and stringy. Then tried another YouTuber, that didn’t work similar result. Then I found one here on Reddit with lower hydration grantbakes https://grantbakes.com/good-sourdough-bread/ and it turned out great! I’m in a very humid area (60 to 70%). The crumb is a little gummy and the crust is FANTASTIC. But I’m very happy with my first loaf and ready to make more but I don’t want to be wasteful and not eat it first. Patience!

I would love to hear feedback or thoughts to improve my process. Please look over my method in the pictures.

Hi is it okay to use All Purpose Flour as an alternative for Bread and Wheat flour?
And what do you mean you coil foiled once for the 4 hrs rest period? Do you mean after 2 hrs. you coil foiled it?

Thanks in advance for your answers and the recipe.
