Hi my friends, I just had to reshare this recipe with you to remind you how incredible something so simple can be when using in season, fresh ingredients. I picked tomatoes from my garden and had us a great lunch in under 20 minutes. The recipe amounts are estimates, this is real home cooking, little bit of this, little bit of that kind of thing and that’s always my favorite recipes to share because it allows you to really play around and personalize a dish to your exact liking. RECIPE:
8oz of Medium Cut Pasta of choice
Couple Cups of Cheery Tomatoes, halved
3 Tbsp of Extra Virgin Olive Oil
2 Cloves of Garlic, smashed
Fresh Basil
Salt to taste
Plenty of Parm

Let’s make my very favorite summer tomato sauce. I make this every single pretty much every single day it feels like in the summer. We have so many cherry tomatoes and sunold tomatoes growing that I literally cannot keep up. So, I make this all the time because we love it as a family and it’s really the very best tomato sauce ever. It takes about 15 minutes to cook. It is so delicious, just sweet and savory and phenomenal. I just went out into the garden and I grabbed a little basket full of colorful tomatoes and I came back into the kitchen and got to cooking. I just take my tomatoes and I cut them in half or quarters if they’re really big, but typically just in half. And then to make the sauce, you need very few ingredients. Good quality extra virgin olive oil, a couple of cloves of garlic that I smash and peel, but I don’t chop. Once it comes to a sizzle and that garlic becomes fragrant, you’re going to go ahead and add in your beautiful sweet cherry tomatoes. Give them a really good season with a pinch of salt. Add a good amount of fresh basil. And this is your sauce, you guys. This is it. This is simple. It’s perfection. And it’s Italian food at its very finest. We take beautiful vegetables and beautiful produce in season. And we just take very good care of it by cooking it very simply with a few good quality ingredients. And the end result is always phenomenal. The tomatoes need about 15 minutes to cook down and burst and just give out their beautiful sweetness. At the same time, you’re going to want to cook your pasta to al dente. You can choose any pasta that you like. Once the tomatoes are ready and the pasta is ready, unite the two with a really good heavy handful of parm or even pecarino if you like. And then just stir everything together, cooking it together for about a minute or so, or until that pasta absorbs the sauce and it just becomes so glossy and delicious. And I’m telling you, it is one of life’s greatest pleasures. I don’t know how how any other ways to really describe it other than to just say it is one of the best tomato pasta dishes of all times.
