It reminds me of a Mexican pan, comal cazo, where the well is used for frying oil and the “shelf” is where you put the finished fried food while you attend to what’s in the oil still. However it’s not one, but that could be its purpose.
My guess is that you spoon batter into the hole, and then reheat some fatty bacon on the outsides. The bacon grease would liquify and run down into the pancake and create crispy, textured edges, it’d be a uniform shape but have a rustic aesthetic due to the bubbling fat around the edges and the offset positioning of the inner circle would add to the rustic, asymmetrical aesthetic, while also making the pan easier to handle as the heavy pancake batter would have less perpendicular distance from the pivot ( your elbow).

For cooking two ingredients simultaneously that need different cooking temps? Or cooking something saucy in the deeper part and sauteing vegetables next to it? Maybe crispy bacon and eggs?

– where is this(country continent would already help)? – what material? Cast iron/aluminium? – age? Is it a family heirloom, did you get it on a garage sale, is it in you kitchen from the 80s?

I’ve seen these marketed as “basted egg pans”. You crack raw eggs in the small pan, and add water to the larger part. Place dome lid on, and in a few minutes you get steam basted eggs.

I don’t know what it’s traditionally used for, but I’ve seen it used to poach eggs. Fill the pan with simmering water, crack your egg/eggs in the smaller circle so they keep their shape, and cover with lid until done.

Wow NONE of you are right and it’s so easy….. It came out in 1985 as an egg poacher you put water around the outer loop and then put your egg in the center it steams the egg very quickly…
