This was forced upon me via instagram and I am thankful! These very much hit the spot for onions rings and I am excited to eat them again in the future.

In a baking pan about 10×4….

-Sprinkle roughly 4oz parmesan cheese (I used a mix of parmesan/manchego as that’s what I had to use up)
-thinly slice an onion (roughly 1/4” thick) and lay in a single layer on the cheese (I used about a half of a large onion)
-lightly spray with avocado oil
-sprinkle, to taste: salt, pepper, paprika, garlic powder

Cook in a preheated oven at 395f for roughly 20 minutes. Start watching them around 15 minutes so they don’t burn! You’re looking for golden brown crispness like in my photo.

Remove food with the parchment from oven & pan, and cool on a rack.

The whole tray is roughly 450 cals but I split it with the hubby and had it along side chicken for dinner, making myself a filling meal for under 400 cals. You could possibly get away with using less cheese. That was also with a made up dip from spices (with various spices, blended cottage cheese, and greek yogurt).

I’ll tell you, the most fun I’m having while changing my food intake/lifestyle is experimenting with recipes and volume eating. I’m accumulating a cook book haha thinking I need to actually write down my recipes & calories break downs and publish it somewhere 🤔
