If a lemon is comfort, then this is the version that speaks straight to my soul. Avo simple, honest, and my absolute favorite. Start with the vegetable stock of onion, carrots, potatoes, and celery. Simple. Then gently boil your beautiful. Snapper is my favorite and my mother’s too. Pass that rich golden stock through a sie. Then add kitharaki. You can use rice, but for us, it’s always been this way. Now comes the avo. Whisk the egg whites until light and frothy. Then add in the egg yolks. Add plenty of lemon juice like we always do. Then slowly temper with hot soup, whisking quickly. We’re after a smooth and silky result. Pour the avoir through. Let it sit so it can thicken just enough to become a velvety bowl of comfort. Add some vegetables and fish to your bowl and ladle over the soupa. I can’t even begin to explain how much this dish takes me home. If there’s one thing that tastes like childhood, like being wrapped in warmth and love, this is it.
