this is a side dish but I could eat this entire dish easy as many zucchini as you want slice a little nip so it doesn’t rock slice it lengthwise like that this is Mama Te’s recipe my good friend Shantel’s mom it is so good line them out on a cooling rack let it set several hours to overnight to dry them out a bit so they’re not mushy kosher salt both sides brush both sides of the zucchini with olive oil season both sides pepper boil the grates medium low heat two to three minutes each side stack them slice them lengthwise into strips like that good extra virgin olive oil italian sea salt for texture fresh mint parsley because you’re fancy if you have a garden and you grow zucchini this is it baby so so simple and so good
