Scrambled eggs with chopped tomatoes, chopped onion, feta cheese, and fresh mint. I also made my own whole wheat bread. When I sat down, my daughter asked me what I’m going to do when school started next week. I think I’m going to have to switch it up to oat meals and yogurt type breakfasts? What are some of your go-to work day breakfasts?

    One of my favorite no fuss meals is a whole wheat tortilla with hummus—I always make at least one variety a week—micro greens or other greens, and a sprinkling of feta cheese. I tend to prep individual ingredients that I can throw together like eggs, veg, grains and beans so it’s very easy to mix up what I put in these wraps. They’re very quick and very portable.
