  1. One Pan Pesto Tomato Pasta✨ With this recipe, you can either pre-boil the noodles or cook them as the tomatoes are roasting! Whatever is easiest for you at the moment! (Recipe below & follow @thehealthyhophead for more easy & single serve recipes!)

    Recipe:

    Ingredients-
    1 cup cherry tomatoes
    4-5 garlic cloves
    Chili pepper flakes to liking
    Salt/pepper to liking
    2-3 tbsp olive oil
    2 tbsp pesto
    3 tbsp crème fraiche
    2/3 cup uncooked Pasta of choice or 1 cup cooked pasta of choice

    Directions-
    1. Preheat the oven to 375F.
    2. To a small baking dish, add the tomatoes, garlic, olive oil, salt, pepper, & chili pepper flakes. Cover with tin foil & bake for 20-25 minutes or until the tomatoes have burst & the garlic is soft.
    3. Once done baking & if using uncooked pasta, add the uncooked pasta to the disk, cover, & bake again for 15-20 minutes or until the pasta is cooked. Is using cooked pasta, drain some of the tomato water, & add the cooked pasta.
    4 add the pesto & crème fraiche, mix until evenly distributed & the pasta is evenly coated.
    5. (Optional) top with fresh parsley & Parmesan cheese & enjoy!
