Hello my good people. Today is a good day to be out here on the Blackstone. It’s early in the morning right now. We’re going to try to get this going before it gets too hot outside. This weather has been extremely hot in Tennessee. Today we’re going to do a Mediterranean style Greek pa quesadilla on the Blackstone. If you’ve never tried this, this is a hit. Once again, there’s not too many things you can do on a Blackstoneone that are not a hit. So, let’s get right into it. [Music] It’s that easy. Kitchen recipes. Let’s get started with Peter bread, feta cheese, fresh parsley, one onion, about two tomatoes, two lbs of ground lamb, one pound of mozzarella cheddar cheese blend. Now for the marinade. Four tablespoons of vinegar. 2 tablebspoons of paprika. 2 tablespoons of ground oregano. 1 tbsp of olive oil. Half teaspoon of kosher salt. Half teaspoon of coarse pepper. Now give that marinade a good mix. Now pour half the marinade per one pound of meat. Repeat the process for the other pound of meat. Or you can decide to use a large container and do it all in one setting. Now finally, chop the fresh parsley. That yields about half a cup. Now come in and medium chop those tomatoes. Next, come in and broad and long chop the onions. To make the taziki sauce, I’ll be using this cabbage brand whole milk creamy Greek yogurt. In addition to the McCormic Greekstyle tziki sauce seasoning pack, first we want to add one cup of yogurt. Next, we’re going to come in and add the sauce seasoning. Mix ingredients well. When finished, place in the refrigerator until time needed. On a side note, these fly fans work great for protecting your food while cooking on the Blackstone. All right, let’s get our oil up and ready to go. All right, the first thing we want to do is come in and get this ground lamb cooked up. This has been marinated. We’re going to add a little more of that taziki seasoning that came in a pack to this. It won’t take long to cook this ground lamb. Ground lamb is a really good choice if you never had it. going to have a lot of flavor in that meat. You see so much of the marinade running out of there. We’re going to season this up. Going to give it a little taste. And this is the the dual pack Greek seasoning. It comes with a taziki sauce seasoning and then it has the seasoning for the meats. And you always want to wait and season this up a little towards the end. A lot of the grease will uh from the meat will dissipate some of the flavor. So you want to wait till you pretty much almost got it well done. Put a little more on here. Use the rest of that packet. I got my burner on the left set to the lowest setting. So, I want to put my pita bread on that side. I don’t want to be too hot to scorch it. And that meat is seasoned up really well. You can add a little salt if you if you need to, but it won’t take much. Depends on how much zest you like in your food. Going to add a little bit of pepper. I love pepper in my food. We’re going to push this meat to the corner so it’ll stay warm. We get ready to prep our pas. Squeeze some of that grease out of there. You don’t want it too oily on your pa. I’m going to put a little more oil down before we prepare these pas. Put these down first on this side. Get them brown a little bit before we flip them over. We’re going to flip them over. Now, we are going to add our cheese. Going to take one set of these off. Nothing like that. Good cheese. This is a mozzarella cheddar mix. Then we’re going to come in and add that good meat. You can be sloppy with this as you want. We’re going to come in and add a little feta cheese on top of this. What’s Greek without feta cheese, right? This next step is not mandatory, but I’ll be removing the pas from the black stone a couple of minutes to make sure they don’t get too brown. We’re going to come in and place these down and put some of that great taziki sauce all over this. Spread that on really nice. This is what’s going to set it off. I’m going to add a little more cheese to this. Cut some of the fresh parsley here. I’m going to place these back on here. I didn’t want to overcook them. So, we’re going to put some fresh tomatoes. Man, look at that greatness right there. We going to scatter some onions on here. Now, this is a quesadilla, y’all. Mediterranean style. Snap that on top of there. Like that, man. Look at that. I’m using a pizza pan and it makes it easy to get these quesadillas off your Blackstoneone. You can use your regular spatulas, but I like using this for the convenience because it’s easy to slide them on there, get them off at one time. These Greekstyle pita quesadillas are absolute perfection. If you’re looking to try a new recipe exploding with flavor, then this is the right choice. That taziki sauce is definitely a game changer. I can guarantee your family and friends will not be disappointed. Y’all know what it is. It’s my favorite part of the cook. Man, I’m just about speechless after a couple of bites of that greatness. These Greekstyle quesadillas are such a great choice. You can also make these with chicken, beef, pork, or any other type of meat you like to use.
