Claussen pickles have not been hitting like they normally do to me so I decided to try to recreate them. I like a crispy, crunchy, salty, dill pickle so that’s what I’m going for with this recipe. I have an idea of the ingredients claussen uses, but no idea of measurements. I’ll let you guys know how they turn out!

my all-time favorite pickles are claen Kosher Dale pickles but I don’t know if it’s just me or not they have not been tasting the same lately so I’m going to try to recreate them on my own at home I started by scrubbing the dirt off of some pickling cucumbers and then I transfer them to the sink with some water and vinegar I’m just going to let them soak for about 15 minutes just to disinfect them once they’re done soaking I go ahead and give them one final rinse off and then I transfer them over to a cutting board I cut off both ends of the Cucumber you want to at least do one end you don’t have to do both but you should at least cut off the blossom end to avoid having a bitter taste I then cut them into Spears and then I want a Crispy Crunchy pickle so I’m going to let them sit in an ice bath while I work on my brine since I’m going for a specific flavor and texture with these pickles and it’s my first time making them I don’t have exact measurements but I did use water vinegar kosher salt a dash of sugar and then this pickling spice mix I made I just heated that over the stove long enough for the sugar and salt to dissolve and then I set set aside to cool down I then cut up some fresh dill and started packing my cucumber Spears into my jars before adding my brine to the jars I did let it fully cool to avoid getting the Cucumber soggy but I added my brine at that point I added some minced garlic some black peppercorn more of the pickling spice some fresh dill and then I put the top on gave it a shake and I’m going to put it in the refrigerator for 2 to 4 days I will definitely let you guys know how they turn out and hopefully have a recipe posted within a few days

You lost me with ‘I don’t have a recipe’.
I’ve noticed Clausen doesn’t taste right anymore, too. In fact, they seem to taste different with each jar so I think they must meddling with the original recipe. Plus, they are so expensive now. I’d like to make my own but I’m afraid I’d end up with “kerosene cucumbers” like Aunt Bee on the old Andy Griffith show. 😂 Hope yours come out good!
