Can you tell me how you get such a nice sear on the grill? I cook my steaks fully on the grill and I have found I can’t achieve that kind of crust while hitting a medium rare internal temp no matter how hot I set the grill, it’s usually at 600 degrees when I first put the meat on. I do get great crust on a very very thick steak because I can cook it longer to get the temp I want. Any tips are appreciated!

Got to cut the gold label ribeye, tri tip, and tenderloin at my old meat shop; it’s very strange. Almost doesn’t feel like you’re even cutting meat.
I actually tried the tri tip also, and it was definitely worth the price. Marbling looked like someone had just poured powdered sugar on the thing.
