I swear I learn about a new allergy every week. My after work late night reading was a journal of allergy and immunology paper about wood allergy and smoked meats.

    Yeah. Unfortunately there are some allergies that can’t be accommodated. If you have a wood smoke allergy, brisket (and bbq in general) isn’t something you should order.

    Right the hickory “allergy” but imo since you can’t remove it. Nor are you going to make them wait for hours to make an oven roasted brisket (if so inclined) it looks to me as though they just ordered expensive side items. Of course reasonably you just get the server to ask them to order something else as the request isn’t possible

    I did not work at the place but I had a fellow grill cook one time who told me he got a ticket that said Mesquite on the side. They grilled on mesquite wood. I think they think mesquite is like bbq sauce or something.

    That’s pretty strange, but I would take all allergies at face value. Which means, since I can’t guarantee against trace amounts, you’ll need to eat somewhere else tonight.

    Smoking on Hickory can really overpower meat. More than a few people are averse to Hickory smoked meat. Apple wood is king for restaurant application imho.

    I would just check what sort of wood you’re using on those spare ribs and see if you can accommodate or not.

    I mean, it’s weird, and I’d probably poo poo it too if I didnt have a birch allergy.

    Like, allergic to the entire tree(except for the pollen somehow, by some cosmic mercy), both black and white, though black birch are usually the source of my reactions since they’re harder to identify quickly

    Thankfully, birch isn’t really used in cooking and I’ve never seen it used in BBQ, so I have no idea what would happen to me if I ate something smoked with it or plank roasted with it.

    Although, considering I had to go to urgent care for stronger antihistamines when my throat started swelling after leaning on a black birch for 20 minutes, I’d rather not find out.

    EDIT: Wait, what are the odds of 3 separate people all eating together having this unusual allergy?

    At a Bonspiel in rural Wisconsin, my curling teammate found out the hard way that he was allergic to birch. He had a steak that had been “seasoned” with diluted birch syrup on the Friday night and woke up sick as a dog Saturday morning. He mistakenly attributed his woes to the midnight cheese curds. But Saturday night, we got to sample pure birch syrup. Within minutes, he was in massive GI distress. I’ve never seen anyone literally turn green, but he’s the closest to living up to that expression.

    I have a mesquite allergy. It’s the same as any tree allergy, it’s only a concern in bbq basically.
