Start with 4 bulbs of garlic. Peel. Anyone that says peeling a lot of garlic is therapeutic is full of shit!! Worst part of the recipe. Use enough olive oil to cover the garlic cloves and fry on low until a light brown color is achieved. Add garlic cloves to 1 1/2 cups of softened butter. I added 1.5 tbsp of chopped Thai basil leaves from the garden, 5 tbsp of grated Parmesan, a tbsp each of salt and pepper and two tbsp of tomato paste. Blend until incorporated. Rough estimates as I’m Italian and measure with my heart.
In a pan, add your pasta, 5 heavy tbsp of your butter and a splash of your pasta water. Mix and serve! Garnish with chili crisp, grated Parmesan and parsley and enjoy!
