INGREDIENTS:
🔹Chocolate Loaf Cake
▢1¼ cups (150 g) all-purpose flour
▢½ cup (50 g) unsweetened cocoa powder – Dutch processed preferred
▢1¼ tsps baking powder
▢½ tsp baking soda
▢½ tsp salt
▢¾ cup (150 g) soft light brown sugar
▢½ cup (100 g) white granulated sugar
▢½ cup (120 g) whole milk – room temperature
▢2½ tbsps (35 g) unsalted butter – melted
▢⅓ cup (70 g) unflavored vegetable oil – I use canola oil
▢2 large eggs – room temperature
▢1¾ tsps vanilla extract/essence
▢½ cup (120 g) strong hot coffee – made with ½ tbsp instant coffee in 120g hot water

▢¼ cup (56 g) heavy cream
▢⅔ cup (110 g) dark chocolate
▢¼ cup (56 g) unsalted butter
▢⅓ cup (42 g) powdered sugar – also known as icing/confectioners’ sugar
▢⅛ tsp instant coffee powder
▢⅛ tsp salt
▢1 tsp cocoa powder – Dutch processed preferred
▢½ tsp vanilla extract/essence

Okay, today we’re going to be making the best ever chocolate loaf cake. It’s super moist, rich, and packed with chocolate flavor and is topped with the most incredibly smooth chocolate fudge frosting. I promise you’re going to absolutely love it. So, to start off, you want to preheat your oven to 180 C or 350 if conventional and lightly grease an 8.5x 4.5 in loaf tin. I’m using my homemade cake release to grease my tin. And then you also want to line the pan long ways with some parchment paper. This is just going to make it so much easier to take the loaf out once it’s ready. Set your loaf pan aside for now. And next, we’re going to sift together our dry ingredients. So, I’ve got 150 g or 1 and 1/4 cups of plain allpurpose flour, 50 g or half a cup of Dutch processed cocoa powder, 1 and 1/4 tesp of baking powder, half a teaspoon of baking soda, and half a teaspoon of salt. And then using a whisk, give that a good mix until it’s well combined and set it aside for now. Next, in a large mixing bowl, you want to add in 150 g or 3/4 of a cup of soft light brown sugar, 100 g or half a cup of white granulated sugar, 35 g or 2 1/2 tspoon of melted unsalted butter, 70 g or a3 cup of unflavored vegetable oil. I use canola oil, 120 g or half a cup of room temperature whole milk, two large room temperature eggs, and 1 and 3/4 teaspoons of vanilla. And then using a whisk, give that a good mix until it’s well combined. Now, next, you want to add in your pre-sifted dry ingredients from earlier to the wet ingredients. and then mix that in with your whisk until just combined. You don’t want to over mix. So just mix until the mixture is nice and smooth. Now to finish off the batter, you want to add in 120 g or half a cup of strong hot coffee. So you can use espresso for this or instant coffee powder, too, which is what I’m going to be using. So I’m just going to add half a tablespoon of instant coffee powder to 120 g or half a cup of hot water. Give that a good mix. And then you want to add that to your batter. And then again using a whisk, mix that in until just combined. You don’t want to over mix it. Okay, so that is our batter all done. So so easy. And it honestly just smells incredible. And now you just want to pour this into our pre-prepared loaf pan from earlier. Now once all the batter is in, you just want to drop the cake tin lightly on the counter once to remove any large air bubbles. And now this is going to go into your preheated oven for 50 to 60 minutes or until a skewer or thin knife inserted into the center comes out clean or with a few moist crumbs on it. So our chocolate loaf is all done now. It has the most beautiful rich deep color to it. And now you just want to let it cool in the loaf pan for about 20 minutes just to give it a little bit of time to firm up before running a thin knife along the edges that don’t have any parchment paper just to release the loaf from the pan. And then you want to use the parchment paper that’s hanging over the edges to carefully lift the loaf out and place it onto a wire rack. Now you just want to let this chocolate loaf completely cool. And while it’s cooling, we’re going to go ahead and make our chocolate fudge frosting. It’s super easy to make. You just want to place a small saucepan over a low heat and add in 56 g or a/4 cup of heavy cream, 110 g or 2/3 of a cup of good quality semieet chocolate, 56 g or 1/4 cup of unsalted butter, 42 g or a3 cup of powdered sugar, an 1/8 of a teaspoon of instant coffee powder, 1 teaspoon of Dutch processed cocoa powder, and half a teaspoon of vanilla. And then you just want to give that a good stir. And then just allow the mixture to slowly melt and combine together. Making sure to stir every now and then so the mixture doesn’t burn. It’s also important not to let the mixture simmer or boil. So as soon as everything is melted together and smooth, you want to immediately take it off the heat. So once the mixture is ready, you want to transfer it to a heat proof bowl. And I like to just pour the mixture through a sie just to make sure that it’s super smooth, but this step is optional. Now, all that’s left to do is to let this frosting set and thicken up. Now, you can just let this happen at room temperature. It might kind of take about an hour or so, or you can pop it into the fridge to speed up the process, and you know, just kind of give it a mix every 15 minutes or so until it’s like a nice thick spreadable consistency. So once the loaf is completely cool and the frosting is thick, all that’s left to do is carefully transfer the loaf to a serving plate and spread the frosting evenly over the top of the loaf. And then it is ready to slice and serve. This chocolate loaf is so incredibly rich and moist and is packed with chocolate flavor. Being a loaf, it’s easy to slice and serve and is perfect for dessert or even as a snack to have with your coffee or tea. M. That is so so incredibly good. The loaf itself is so so incredibly soft and moist and that chocolate fudge frosting is literally the best. You don’t want to skip it. If you love a good rich chocolate cake, then you absolutely have to give this chocolate loaf a go. So, that is it for today, guys.
