This salad was soooo good.
Salad base:
40g split chickpeas
30g red split lentils or 30g mung beans
100g sweet potato in cubes
35g kale
40g Cos lettuce
60g cucumber
Dressing:
5g nutritional yeast
1/2 cup vinegar liquid from jar of sweet and sour pickled cucumbers
20g tahini
Boil sweet potato, chickpeas, lentils and let cool.
Chop up remaining ruffage
Combine salad base and add dressing.
Mix through well and enjoy!!!

Huge fan of nutritional yeast especially on popcorn with extra virgin olive oil.
It’s like really healthy cheese type flavor in case anyone wants the tip!
Can toss with extra virgin coconut oil too 🙂
