Made some brisket tacos and elotes for dinner, got some playful jabbing on another sub about the onion overload, but onions are the GOAT taco topping.
I've been making the pickled red onions using the recipe another lovely redditor gave me a little while back and they are killer. One of my daughters was super sketched out about the jar of pink onion juice and I had to explain to her it was probably the first time she was eating something hot pink that wasn't artificial.

But street vendors also put diced beets on the tacos sometimes! And what about cabbage? What say you?
If it’s a shrimp or fish taco, I like cabbage. Otherwise, I do only like cilantro and onion on there. With some grilled jalapeño on the side.
The salsa you used has other veggies..
Did peppers do something to offend you? Past that, if you’re eating marisco tacos without cabbage your palate and life are sad.

I understand your enthusiasm. But nopales, potatoes and jalapeños are dope additions/fillings too. Honorable mention is grilled pineapple.

Do you count cilantro or radish? What about a spicy tamatillo and jalapeno salsa?

Not authentic by any means, but I loveeee crispy grilled zucchini on a taco.
I love onions more than anything but the best taco includes cilantro with those onions.
