My partner and I are in disagreement whether this pork chop is undercooked.

Please, we need an expert opinion!

    Quality pork is fine with a slight pink in the center that is damn near raw

    Temp was lowered from 160 to 145 a while back by the USDA but with a 3 minute rest, so you will have pink. I would not eyeball it though. Get an instant thermometer. That looks raw AF. If it was close it would at least have some crisp on the outside. Thats wet and soggy.

  4. Ya know, with modern pork in places like America (for now), Germany, and other countries, you don’t have as great a risk of trichinosis as back in the day, and a little pink can be ok. Hell, the Germans eat raw minced (ground for my fellow ‘Mericans) pork all the time. I think it’s called mett or something.

    That being said, that doesn’t mean I would make a habit out of eating undercooked pork. I mean, possible health risks aside, just the texture alone is fucked enough to make me shudder.

    Like others have said, get one of the meat temp probe things. They’re pretty cheap online and you can get a solid one at a good price if you just avoid the ones laden with current marketing buzzwords like ai and shit.

    Red meat yeah heated to 150 in the center is fine.
    Pork is another story trichinosis or not. I have a long family line of meat graders, my brother owning a meat market after inspecting and serves food. I processed meat for many years from general cuts to slow smoked sausage, jerky etc.
    This is undercooked for pork. May not make you sick this time, but I promise one day it will snag you when you least expect it if you eat it undercooked. While being handled I would like to think everyone is on top of keeping it cold as needed etc.
    There a lot of variables. Pork, chicken and especially seafood needs cooked properly. It’s your body just a lil advice.

    This hysteria about pork was in regards to days of yore when we didn’t have refrigeration. (Only eat pork if there is an R in the month etc). With regards to trichinella, we haven’t had a case in the UK since 1969 because it has been eradicated from domestic animals.

    Pork is lovely cooked slightly rare, it retains a sweetness and is incredibly succulent. It dries out and loses flavour very quickly with over cooking.

    However, if that pork is from wild boar, yeah, cook that right through.

    I read last week in the paper about this family in San Luis Obispbo. In California. That whole family died of trichinosis. That’s uncooked pork.

    Pork chops are fine (best) with a slight blush of pink, but that doesn’t look like any heat has gone through it at all. 🤢
