Entire recipe: makes 4 cucumber boats – 20g protein, 333 calories

1 can of drained and rinsed chickpeas

Red onion, chopped – as much as you want. I use about 1/4 of a red onion

Celery, chopped – as much as you want. I use about 1 stalk chopped

Vegan Mayo (oil-free). I make my own using 1/2 block silken tofu, 2-3 tbsp nutritional yeast (more or less depending on taste), a capful of apple cider vinegar or 1 tsp lemon juice, 1 tsp maple syrup, salt & pepper to taste

Salt and pepper to taste

Nutritional Yeast to taste

Everything But The Bagel Seasoning for toppings

Cucumbers

🥒Directions:

Rinse and drain chickpeas

Chop veggies

Add veggies and chickpeas together in a large bowl.

Add mayo until its as you like

Add salt, pepper and nutritional yeast to taste. Set aside

Make cucumber boats by cutting a large cucumber in half and scooping out the flesh.

Add the chickpea mixture to the cucumber boats

Make as many as you’d like, top with EBTBS and enjoy!
