Usually when I make tostadas ill use sliced tomatoes, lettuce, and queso fresco on top. This time, I made Chipotle chicken, and a cabbage mix for the top. The cabbage mix is simply thin cut carrots, red onion, cabbage, a pinch of salt, and Mexican oregano. Topped with cotija cheese and my garden fresh salsa Verde! Absolutely killer. And all of my (small) kids demolished their plates! 😎💪🤠
