Ingredients For the Salad:

1 cup orzo pasta (uncooked)
1 cup sundried tomatoes, chopped
½ cucumber diced
¼ cup black olives, sliced
½ cup feta cheese, crumbled
¼ cup fresh parsley or basil, chopped

Ingredients For the Dressing:

3 tbsp olive oil
2 tbsp lemon juice
1 garlic clove, minced
1 tsp dried oregano
Salt and pepper to taste

Ingredients for the Grilled Cajun Chicken:

200–250g chicken breast
1 tbsp olive oil
1 tsp paprika (smoked or sweet)
½ tsp cumin powder
½ tsp garlic powder
½ tsp onion powder
½ tsp dried oregano
½ tsp dried thyme
1/2 tsp rosemary
¼ tsp cayenne pepper (adjust for your spice tolerance)
¼ tsp black pepper
¼ tsp salt (adjust as needed)
Optional:
– Squeeze ½ lemon juice + 1 tbsp olive oil to make it a marinade.
– Add ½ tsp brown sugar if you want a subtle sweetness.

Instructions:

1. Boil salted water, cook orzo for 8–10 minutes until al dente. Drain and rinse under cold water.

2. Rub chicken with olive oil, Cajun spice, paprika, salt, pepper, and a squeeze of lemon. Let it marinate for 10–15 minutes if possible.

3. Heat a grill pan or regular pan, cook chicken 5–6 minutes per side (depending on thickness) until fully cooked and lightly charred. Rest for 5 minutes, then slice thinly.

4. Whisk olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a small bowl.

5. In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, olives, feta, and parsley.

6. Pour the dressing over the salad and toss well.

7. Place sliced grilled Cajun chicken on top.

8. Best chilled in the fridge for 30 minutes for flavours to develop.
