[Music] Hello guys, welcome to Baking with Akis. Today we will explore two recipes full of flavor and simplicity. First, we will make one of Gree’s most famous savory delicacies, spanopita, a golden filop pie filled with spinach, herbs, and feta cheese. And then for dessert, we are keeping it quick and delicious with a whole orange blender cake. This recipe uses an entire orange skin and all blended into a fragrant cake. Let’s get started. [Music] We are starting today with a classic spanobita, the Greek spinach pie. Layers of crisp filo enclosing a rich flavor filling of spinach, herbs, and feta cheese. This comforting savory pie is perfect as a meal, snack, or even served at a gathering. Let’s take a look at the ingredients. Greeks peanuts and feta cheese pie spanopita. Ingredients for the dough. 500 g hard flour, 100 g olive oil, 20 g white wine vinegar, 10 g granulated sugar, 1 and 1/2 teaspoon salt, 210 g of water. To assemble, 200 g olive oil, fine simolina. For the filling, two tablespoons olive oil, three spring onions, one kilo of spinach, half a bunch of mint, one bunch hard, one/3 of a bunch dill, the zest of one lemon, 500 g feta cheese, 200 g cream cheese, salt and pepper. First step of the recipe is to create our own filow. Is it possible? Of course, it is. If you want to to take a storebought, you can do it. But if you want to make a homemade stuff, it’s also very easy. Now, all the ingredients into the mixer, mixing mix for 7 8 minutes, and the dough will be ready. Here I have my water, extra virgin Greek olive oil, a little bit of vinegar, salt, sugar and flour. Hook attachment. Close the mixer and beat for 7 to 8 minutes. My dough is ready. Look at that. Beautiful. Nice and sexy. And we’ll need to give some time. About 30 minutes is good to rest the the dough on the side. You can rest up to 2 hours. You don’t have any problem. Just wrap it with a clean film and set it aside. So, first step of the recipe, the filler dough done. Now it’s time to prepare the stuffing. Here I have a pan and as you can see I have plenty of spinach because when we cooking spinach the volume reduces. So we have to consider about that. We want to make a very nice fluffy bite. So we need a lot of stuffing. Now I have some spring onion. I will chop chop a little bit. I need extra virgin Greek olive oil. Easy. And I will start with my spring onion. Tasty, nice, sexy, and full of spinach. Spinach uh giving power. So don’t be stingy. Add a lot of it. Now the spinach is going in. And you have to do it in batches because my pan is not big enough for all the spinach. After one to two minutes, I will add more and more and more and more until my spinach is wilted. [Music] And my spinach is ready. I need a bowl and I need to transfer it here. And as you can see, this is what left from the spinach. Don’t worry, it is full of flavor. If you want to use frozen spinach, you can for this recipe. I have no problem with that. And I will add a little bit of salt, a little bit of pepper. And let’s add the rest of the herbs and the ingredients. Here I have few things that we need to make a nice spinach pie. Here I have some hard word. If you cannot find it, you can use some turville. It’s okay. Here I have some mint. some dill. And it’s time to bring all these herbs together. How? With cream cheese or yogurt. You can use whatever you want. And we are making a spinach pie, a Greek one. So, what cannot be missing for this recipe? Fat seed. Yes. This is uh the key ingredient. We want feta cheese. That’s why I added so little salt because feta cheese is quite quite salty and we want that. And this is the stuffing. Now mix everything together. And the spinach and feta filling is ready. I will wash my hands because now it is time for the satisfying part of this recipe. The part that we are creating our own filow. I love this process. And here is my filow dough. Easy cheesy, elastic, and nice. We need six pillow seats. Three for the bottom and three for top. So these are three and these are other three. One, two, three, four, five, six. And here I have a tray 30 cm. And I will start everything here. I need my olive oil. Extra virgin, good quality olive oil. Now, if you are a butter lover, you can use butter. But then you are not making a Greek recipe. You’re making a Greek/ friends recipe. And this is my secret ingredient. What is that, Pablo? Do you know? Seolina. It is seimolina. Seolina will make extra crispy my pie. And this is exactly what I want. I will roll out my filow dough with seimolina. And if the filow seeds stick to the surface, then you have to add a little bit more seimolina. This way you will have a crispy layer of filow. At the same time, it will be very very crunchy. [Music] And as you can see, my STO is very thin and very sexy. Now the first one is done. I will carry on with the rest. And it’s time to assemble the pie. Here I have my tray. And I will take my first pillow. Put it here. And try to leave an overhang over here. Easy. Extra virgin Greek olive oil. We need all this quantity of olive oil. So don’t be stingy. We want the olive oil to separate the filows. That’s why we using a lot of olive oil. The second one on top. Easy. This way. More extra virgin. Olive oil. Perfect. Ah. Come on, man. Stay there. I want you here. Okay. Please stay there. One more. And I don’t care about you. You can stay in. Okay. Now it’s time for the filling. And all this filling will go on the top of filos. Look at this quantity. When you are making a Greek spinach pie, you have to understand that you are making the most juicy and delicious pie in the world. Spread a little bit the filling. And it’s time for the rest of the filows. one on top. Now, we don’t care about the edges, but we do care about the olive oil this way. The second one again. Lovely. And please do not care about any holes in the filows. Don’t worry, at the end the spinach pie will be perfect. Now all the edges they have to turn this way to crimp the pie this way. And guess what? The remaining olive oil will go on top. Don’t worry, it will find its way to go down and make everything pretty nice and sexy. Now I will score my pie. Nice. And nice. And it’s time for baking. My oven is preheated to 190ยฐ C. And we are going to bake for 50 minutes to 1 hour. And it’s peanut pie time. And can you see that? This is so lovely. Always when I’m making a pie, I feel happy. And you hear that? Because of that. Trust me, when you make this recipe, you will be fighting over the last piece. Everybody wants to taste a little bit of Greek spanacopita with all this stuffing. Can you see that? This is absolutely gorgeous. And when you try once, you will realize that uh it’s very easy to make your own pie. And you will make pies every single week. Try it and you will love it. All these herbs, the spinach, the feta cheese, the homemade filow making this bite a piece of chevron. [Music] [Music] Next up is a dessert that’s as simple as it gets. Whole orange blender cake. This recipe features a whole fresh orange blended with its peel to create a delicious fluffy cake bursting with citrus flavor. You won’t believe how easy it is to whip up. Let’s see our ingredients. Whole orange blender cake. Ingredients. One orange, 250 g. Three eggs. 180 g granulated sugar. 100 g whole milk. Vanilla powder. 200 g spreadable butter at room temperature and extra for the loafing. 250 g allpurpose flour plus extra for the loafing. 50 grams baking powder, one pinch of salt. The only thing you need for this recipe is a blender and five minutes hands on. Now I will open my blender. And here I have a nice medium orange. Not too small, not too big. I will take just the edge here which is a little bit bitter and the other edge here and so simply I will cut into wedges. Now, if you are lucky, your orange will not have any seeds as mine. But if you find any seeds, just take them out. Now, easy. It’s easy. No seeds. I am very lucky. And the orange is going straight into the blender. Now, have you ever seen that before? No. So this is a recipe full of forance flavor. Now I will add my sugar in, three eggs. One, two, three. Now I will add my vanilla. You can use vanilla powder or vanilla extract, whatever you want. one vanilla, two vanillaas, and my milk. Before I start beating my mixer, I will make sure that I will melt my spreadable butter. We need spreadable butter for this recipe because the spreadable butter will make our cake more fluffy. Okay, now plastic wrap. And I will microwave for about 1 minute until it melts. And at the same time, mixy mix until we have a nice orange paste. And my mixture is ready. Look at this. Lovely. I think my butter is ready too. As you can see is just 3 to 4 minutes recipe. Easy cheesy. I will bring my butter and I want to incorporate the butter with the whole mixer first and then add my flour with baking powder. Now plastic wrap is off. I need a whisk and gradually I will add my butter in. We don’t want to be very hot, but we want to be melted. Easy cheesy. I love this recipe. Actually, when I want to make a very speedy cake and full of flavor, this is the recipe that I’m using. And now it’s time for the rest of the ingredients with flour, baking powder, and a pinch of salt. The salt is in. Baking powder is in. Mixy mix everything. And this is it in the mixer. And stir everything for a few seconds. At this point, your mixer will look very runny. Don’t worry about it. It should be like that. And now it’s time to bake this lovely mixture. First, we have to transfer it into a cake tin by 30. I already buttered and dusted with flour. And just pour the mixture in. And this is it. 50 minutes to 170ยฐ C set to fun. The rack should be at the highest level. And in 50 minutes, the cake will be ready. And my cake is ready. always the edge is my favorite part of the cake. So this is for you. Take it. Yes. And I will carry on with the rest. That actually means that you are my favorite one. Okay. You should appreciate that. Can you see that? So fluffy, so tasty, so buttery, so citrusy. This cake is something else and so easy to make. Look at that. In five minutes, it was in the oven. And you don’t have to add anything else. I’m always adding some mint to my cake. And just a small piece for me. Don’t worry, I will eat the whole thing. After I will make a sandwich with my cake. So much deep flavor. So much flavor of forance. Only with one orange. This cake is unbelievably good. [Music] And that’s a wrap for today’s episode.
