This frittata is summer appropriate, super easy and delicious. It can be on the table in less than 30 minutes.
Ingredients:
7 large eggs
1/2 cup marinated artichokes
1/4 cup roasted marinated tomatoes
1/4 cup olive tapenade and black olives
2 oz. Feta or goat cheese/ I used goat cheese
1 oz. Parmesan cheese
2 small zucchinis
1 cup fresh corn
2 tbsp heavy cream
Salt and black pepper to taste
2 tsp Italian seasoning
1 tbsp butter
2 tbsp olive oil
Preparation:
Start by preheating the oven to 385 degrees F.
Saute the zucchini and corn in the olive oil. They will cook at the same time. Remove from the heat and set aside to cool slightly. In a bowl, whisk the egg well season with salt, Italian seasoning and pepper. Add the cream and whisk very well.
Add the artichoke, tomatoes, olive tapenade and goat cheese. Mix and add the sautéed vegetables. Pour in a greased 9 inch baking dish, sprinkle the Parmesan on top and bake for 25 minutes or until eggs are set. Serve warm and enjoy. It also reheats beautifully, give it a try 👍🏻
