Pork chops were on sale, so I decided to chop them up to a pretty coarse ground meat (chopped pork chops?). Grilled them up with some onions, let the onions sit in some butter with rosemary / thyme / garlic and then added some gouda on the burger and a bit of chicken stock to let the cheese melt a bit and stew the onions a bit.

Pretty good ! Even though the ""patty"" is pretty lean, it wasn't too dry. You can defo feel that it's made from chopped meat and not ground meat, but it makes is a bit more substantial. Will defo try again, probably with some pork shoulder.

    Did you wash the pork with lemon juice or vinegar at least?

    this would have made a killer fried pork chop sandwich too. looks awesome!
